Great Value with Grace - Spicy Caribbean Fish Stew

1) In a large-bottomed pan over a medium-high heat, add 1 tsp of Grace Coconut Oil and sauté red onion, garlic, ginger and red bell peppers for 3-5 minutes until softened and lightly coloured.

2)Add the water, canned tomatoes, bay leaf and Grace Fish Tea Soup Mix into the pan, reduce heat to medium and let simmer for 10-15 minutes before adding the Grace Jerk BBQ Sauce, Dunn’s River Ginger Garlic Pimento Seasoning, potatoes, butternut squash, bay leaf and Scotch Bonnet Pepper. Continue to simmer for 5 minutes, stirring occasionally.

3) De-bone the pieces of Grace Mackerel in Tomato Sauce and flake large pieces of the fish into your stew, along with the Dunn’s River Butter Beans
and continue to cook for 10 minutes on low-medium to heat, stirring well.

4) Fish out (no pun intended!) the bay leaf and Scotch Bonet Pepper from the pot, before portioning your fish stew into individual bowls and garnish each with a fresh squeeze of lime juice to serve - Enjoy!

- 1 tsp Dunn’s River Ginger Garlic Pimento
- 1 can Dunn’s River Butter Beans
- 3 tsp Grace Coconut Oil
- 1 tbsp Grace Jerk BBQ Sauce
- 2 Red Bell Peppers - chopped
- 1 Red Onion - finely chopped
- 1 can Chopped Tomatoes, 400g
- 2 White Potatoes - medium diced
- 1 Small Butternut Squash - peeled and chopped
- 1 Garlic Clove - finely chopped
- 1 thumb Ginger - peeled and finely chopped
- 1 Bay Leaf
- 1 Scotch Bonnet Pepper
- 1 Small Lime - juiced
- 500ml Water
