Nurishment Pancakes with Spiced Coconut Sauce (V)

Method

1) To make your pancake batter: In a large bowl whisk Nurishment Original Vanilla, Dunn’s River Ground Nutmeg, Dunn’s River Mixed Spice (1 tsp), plain flour, eggs, baking soda and salt until fully blended.

2) Add 1 tsp Grace Coconut Oil to a pan and on a medium-high heat, ladle individual pancake mixture portions into your pan and cook gently for 2-3 minutes on each side until lightly golden and fluffy.

3) Repeat the process until all of the batter batch has been used and set pancakes aside.

4) To make the spiced coconut cream sauce: Add Dunn’s River Coconut Milk, Grace Sweetened Condensed Milk, Dunn’s River Mixed Spice (1 tsp) and bay leaf into a pan with 1 tsp of Grace Coconut Oil. Simmer on a low-medium heat for 5-8 minutes until reduced and thick.

5) Drizzle your spiced coconut cream over your pancakes and top with mango slices and mixed berries to serve – Enjoy!

- 100ml Dunn's River Coconut Milk
- 1.5 tbsp Grace Sweetened Condensed Milk
- 125g Plain Flour
- 2 Eggs
- 2 tsp Baking Powder
- 1 tsp Salt
- 1 Bay Leaf
- 1 Mango, sliced
- 30g (small handful) Mixed Berries
