
Curried Goat

Method

Clean Goat meat in a mixture of the Vinegar and Water. Season with salt, chopped onion, Grace Hot Pepper Sauce, Garlic and Spring Onion and leave to marinate for 1 hour or overnight.

Heat Vegetable Oil in a medium heavy-bottomed pan then add chopped Garlic and Dunn's River Curry Powder.

Add the seasoned Goat pieces to the pan and reduce heat to low.

Add Water and cook for 1-½ hours.

30 minutes before the meat is cooked, add the curried goat seasonings to the pan and mix well.

Leave to simmer for a further 10 minutes until the curry sauce is well thickened and the goat meat is deliciously soft and tender.

To Serve: Serve with traditional Rice & Peas - Enjoy!"
